Smoker Planner
Pick a cut and its weight for a starting smoker temperature, a target internal temperature, and a rough time window.
Your cook
Weight
8 lb · 3.6 kg
Smoker temp
Recommended 225–250°F
Time estimate
12 hr – 16 hr
at 225°F, 8 lb. Plan for the long end and hold it if it finishes early.
- Smoker
- 225°F
- Pull it at
- 203°F
- Doneness
- Bark sets near 165°F, then the temperature climbs slowly. Probe-tender at 200–205°F, when a skewer slides into the meat with no resistance.
- Rest
- 1 to 2 hours wrapped in foil and towels inside a dry cooler. It holds serving heat for hours.
- Watch for
- The stall: internal temp parks around 160°F for a while as surface moisture evaporates. Wrap in foil once the bark looks right to push through it.
These are starting points, not a recipe. Your smoker, the weather, and the meat itself all pull the time around, so cook to internal temperature and feel instead of the clock. Leave a spare hour or two: a stall can add time you cannot predict, and a finished cut holds fine wrapped and in a cooler. Poultry, ground meat, and whole cuts follow the USDA safe minimum internal temperatures; the higher pull temperatures for shoulder, brisket, chuck, and ribs are where a tough cut turns tender.
